peanut Butter protein pancake

 

SERV: 6-8 Pancakes

INGREDIENTS:

1 Cup of quinoa flour or oatmeal flour (to get flour consistency you blend it)

1 Chia seed egg or flaxseed egg (8g of chia meal mixed with 40ml water)

1 Teaspoon of baking powder (gluten free)

Pinch of Salt

1/2 Teaspoon Cinnamon

1/2 Teaspoon of baking soda

1 Tablespoon of coconut oil

1 Tablespoon of Peanut butter

2 Servings of Nuzest Clean Lean Protein Chocolate

1/2 Cup of toasted coconut

1 Teaspoon of vanilla extract

1 Tablespoon of JFriend Manuka Honey

1/2 Teaspoon of apple cider vinegar

1/2 Cup of macadamia nut milk

 

INSTRUCTIONS:

Start by mixing the water and chia seed meal (for the egg alternative) set aside until thick (3 min)

Then we take the macadamia nut milk, pour it into a cup and add the apple cider vinegar to it. Leave this aside as well

Taking the chia egg, add your vanilla extract, peanut butter, coconut oil as well as your date past or yacon syrup. Mix this well until smooth.

Start preheating your grill pan.

Slowly to the chia mix, start adding the milk + apple cider vinegar to it, then the rest of the ingredients. Mix until smooth.

When you have reached a batter consistency pour into your non stick pan.

For toppings: 

Raw chocolate drizzle + cashew nut butter sprinkled with some toasted coconut.
